Salads

Bean Salad
1 cup sugar
3/4 cup vinegar
2/3 cup Mazola Oil
Boil together and cool.
1 can green beans
1 can wax beans - No, 2 cans
1 can lima beans drain well
1 can kidney beans
Cut fine: 1 cup celery
cup green pepper
1 small onion

Marinate over night in refrigerator.

Creamy Blue Cheese Dressing
1 pint Helmans mayonnaise
1/2 pint our cream
1 tablespoon vinegar
1 tablespoon garlic salt
1 tablespoon parsley flakes
1 tablespoon onion flakes - dehydrated
1 tablespoon lemon juice
Dash of pepper
4 oz. package blue cheese

Mix together

Bean Salad
1 can yellow wax beans, drained
1 can green beans, drained
1 can red kidney beans, drained and washed
1 small onion
3/4 cup sugar
1 teaspoon salt
1 tablespoon celery seed
2/3 cup vinegar
1/3 cup salad oil
1/2 teaspoon pepper

Mix well and pour over beans and mix again. Place in covered bowl and allow to marinate over night in refrigerator.

Frozen Cranberry Salad
2 tablespoons lemon juice
1 can jellied cranberry sauce 
1-3 oz. package cream cheese
1-3 cup sifted confectioners sugar
1/4 cup mayonnaise
3-4 cup chopped pecans
1 cup heavy cream, whipped

Mash cranberry sauce, add lemon juice and blend. Pour into 1 quart refrigerator tray or 9 x 5 x 3 pan. Freeze. Soften cream cheese, add mayonnaise and sugar and mix well. Add chopped pecans. Fold in whipped cream. Spoon cheese mixture over cranberries and freeze until firm.

Apricot Salad
2 Packages orange jello (3 oz.)
1/2 package lemon jello (3 oz.)
2 cups crushed pineapple (reserve juice)
2 cups apricots, cut in small pieces
(reserve juice)
 Fix jello in usual way, using apricot juice for part of liquid, add fruit put in refrigerator to jell.
 

Put into saucepan 2 tablespoons butter, melt.
Add 2 tablespoons flour and mix well.
Add 3/4 cup pineapple juice.
1/2 cup sugar.
3 beaten eggs. 

Cook until thickened stirring constantly Cool.

Whip 1/2 pint whipping cream, fold into dressing and spread on top of jello which has set. Sprinkle with chopped nuts. Fills 13x9x2 pan 

Molded Gelatin Salad
2 package red raspberry jello (or 1 large)
2 cups hot water
1 medium can tomatoes cut up
4 teaspoon tarragon vinegar

Dissolve jello in hot water, add tomatoes (juice too, do not drain) and vinegar. Pour into mold.

      


Fruit Salad
 
1 can fruit cocktail (drained)
1 can crushed pineapple (drained)
1 can mandarin oranges (drained) handful miniature marshmallows
3/4 cup flaked coconut
1 apple, cut up in small pieces soak overnight in 3 - 3/4 pint sour cream.

Mix Dream Whip according to directions and fold in fruit. Cut banana on top and sprinkle with nuts.
